INCREASING HYGIENE AT OUR CHILDREN’S HOME

As a foreigner you worry about getting sick in India, especially rural India where our Children’s Home is.  The water is dangerous, hygiene is poorly taught and refrigeration is occasional by income. We decided to make the food and preparation of food for our 42 kids and 7 staff as clean as a Western home.  First, we had to put in a reverse osmosis filter system that produced enough clean water for all the children, staff and cooking needs.  Then we bought a second refrigerator to allow all the milk, fish, meat, ice cream, yogurt, butter etc. to be easily put in either the fridge or the freezer section.  Then we built out a new section in front of the kitchen to allow careful washing of all pots and utensils to Western standard.

The result? Vicki and I ate with the children and the food was delicious! Best Indian food I had in a  year. No health problems at all.  This is not institutional food it’s just good food!
